You have to act like you really need the job, tell them you need the money and are eager to work, even if it is not true.

This will hurt you interviewing for most white collar jobs. You are expected to pretend compensation doesn't matter, that it will be reasonable when an offer is made, for the value you demonstrate during the interview process.

If practical, contact similar employers and ask to work for them for free as a volunteer to learn the job.

I did this when I was interested in becoming a Wall and Floor Tiler and had never done a dot of tiling before. As it turned out I enjoyed the time I volunteered with them and the guy offered to pay my expenses and I learnt that I was happy to do tiling for myself on my own projects but definitely wouldn't like to work as a professional tiler on other people's houses.
