I think there are some descriptions using a similar idea (coupling two mountain bikes) to build a tandem bike on the sheldonbrown site.
There's also a way to turn a MTB into a recumbent.
This brings me back to the "learn to weld" ambition/project. I'll keep me eyes on the next catalog from the local community college on a welding class. I know they have them.
