Stuff = everything you'll bring if you had to leave inside of 1 day. I mean "wanted to leave" (don't include your old phone books, your apple tree orchard, and your collection of vintage bricks which you might possibly eventually use one day to build a wall). I realize that half of you people have 72-hour bug-out-bags, so don't pick 1 unless you live out of that bag ;-P

Inside of 1 day- #4
Moved last year, it took 2.5 days, a 26' cargo truck and 6x10" trailer for everything. Significant volume of our stuff, and majority of weight, is garage related.

Edit: after reading Jacob's clarification, each member of our household would bring one carry-on bag. So, 1, I guess.

5 for me, although I would have been a 4 prior to GF and I co-habitating.. If you own a table, it would be hard to be lower than a 4.

Uh... since I already own a very large U-Haul truck, does that count as #5, 6, or 7?
If we HAD to move in one day, it would be #4. Not enough manpower available to pull off anything larger.

My bug out plan would be #4. My extended bug out plan would be #4 and our pop-up. If we moved? All of our vehicles, a semi, and some special vehicles to move some of our unique preps.
All of my personal items would fit into a suitcase as long as I could sling my longs.

For myself 2
I would only bring clothes and shoes so that I would not have to purchase more.
I am not attached to any item other than my ipod shuffle.(tiny and precious).
For my DH and kids,8 might not suffice.

If I had to leave in one day because of a semi-emergency (hurricane, etc.), it would be 3. Mainly because of electronics. If I had to leave in one day for a new job, it would be 4 or 5 (if I brought my mattress).
My first few moves were all 3's. It was nice to be able to move myself with so little effort.

For everything I currently own/moving for a job/etc, it would be 5, mostly due to furniture and weight lifting equipment. For an emergency situation where I just had to go, it would be my bug-out/hitchhiking bag which has everything I need to survive on the road, plus some food and my laptop, so 2 I guess. All my moves in the past were 3s, but admittedly, multiple trips.

Between 7 and 8, due to my 3 vehicles + 8 meter trailer... Otherwise everything I own (that I care about; I'd burn the meager furniture) fits in small van, 4.
However, I spend about 20-40% of the year living out of 1-2.
