Spouse made banana bread but we did not have any eggs. She used applesauce as a substitute. Still worked...I thought it tasted even better actually.

That's funny, we're cooking banana bread too! Applesauce makes a fine substitute, so can chia egg, flax egg, or even mashed banana

lunch was:

french green lentils, from the weekly batch

mixed with:

microwaved frozen spinach
couple of spoons of nooch
fresh ground black pepper
sufficient olive oil to make it all shiny

served over:

de cecco rigatoni

plus:

cara-cara orange
sumatra pourover

tonight's stir fry was sweet potato, green cabbage, and a commercial seitan we got for testing.

seitan was good! it came cut in strips and flavored with a bit of a ginger, so i added soy sauce and toasted sesame seeds to the dish.

wife really liked it so i'm talking her into making our own this weekend--we got all the ingredients in the pantry. hail seitan! :lol:

served with a glass of white wine cuz it was a long and eventful day and it helps unwind

just plain fuji apple for dessert--so sweet!

i was too impatient to try last night's discovery, so breakfast was:

diy lentil burgers (awesome!)
chopped cabbage with white wine vinegar
soy café con leche (suprisingly good with a peruvian light roast coffee)

wow, that was satisfying.

on a low starch kick currently to lose the quarantine bloat.

last night's dinner/desert was diy strained yogurt, with cocoa powder, a sweetener (swerve), 1/4 cup frozen blueberries, and a few crushed pecans.

today's breakfast (i wasn't hungry till mid-morning) was a slice of spam (from pandemic stockpile), 2 pastured eggs, roasted bell pepper, an unsweetened soy latte, and half an orange.

yeah, it's good stuff. i'm going to attempt formula #3 this weekend, "deli slices" which is made from tofu, bakes as a loaf.

eta, hours later: came out like a weird leathery bread! i ate a good chunk of it though. with butter :D

proportions in the video don't match proportions in the comments. and the result was huuge! crusty outside, wet inside. no way that fits in an air fryer. lucky i did it in a regular oven. so that's something i'll have to solve.

the recipe i mixed yielded ten portions of 30g protein, but it's mostly gluten, like a 5 to 1 proportion, so lysine deficient? i need more 1:1 ans will experiment. ofc 3 cups gluten (12 doses of 24g each) almost emptied my current supply.

my wife did not react well physically to the gluten meats so i've had to cancel that project.

back to regular low-carb for now...

lunch for 2 was:

tuna salad: a can of tuna with a diced red bell pepper, half a lime juice and pulp, 1/4 of a finely diced and rinsed raw red onion, 2 tbsp organic canola mayo. would have liked a bit of chopped parsley or cilantro but had none at hand.

chocolate pudding: 1/3 cup coconut milk (canned), 1tbsp cocoa, 2 bits of stevia. 1/4 "peanut butter" flour, 1/4 cup frozen blueberry. creamy and delicious!

(halve the quantities for individual portions)

plus: black coffee

more low-carb:

made a stir fry from a block of xf tofu, peanuts, shredded cabbage, a bit of red onion, some ginger powder (i've got tons), splash of soy sauce, a few drops of thai fish sauce, and in the end i felt the impulse to add a small dollop of ketchup for a hint of a sweet tang plus tomato umami--only a teaspoon. then finished seasoning with italian peperoncino. all was sautéed in avocado oil.

no rice! just a big bowl of tasty fofu and properly greased plants.

oooh it was good. it was all vegan except for the fish sauce which ofc is just optional.

i should get some mirin maybe. also, snow peas. mmmm!

next time i'll add sesame instead of peanut. today i needed to use up some unsalted peanuts we bought for science.

on further thought, we'll be instituting tofu tuesdays in the future, for the alliteration.

might eat some plain strawberries for dessert.

broke my fast mid-morning with a breve latte consisting of:

1 cup unsweetened soymilk
1/4 cup full-fat coconut milk
dark roast sumatra

very satisfying although i will change soymilks to edensoy (12g protein per cup!)

spatchcocked and roasted an organic chicken. we ate the legs, banked the breast, saved the clean bones for broth. ate with a simple colewslaw of green cabbage, white wine vinegar, and salt.

dessert is a small dollop of yogurt cheese with blueberries.

still on low carb/weight loss

this evening's dinner:
-grilled mild italian sausage (1/4lb) with grilled zuccini
-arugula in balsamic olive oil vinaigrette with crottin de chèvre chaud
-pinot noir from the econo-box
-cold mix of blueberries, cocoa, macadamia nuts and cream
-cup of rooibos

doing intermittent fasting so this was one of just two daily meals

lunch was:
2-egg cheese omelette
fresh sliced tomato
1/4 grapefruit
black coffee

Inspired by something @Alphaville posted some time back, lunch today was a mix of whole wheat penne, garbanzo beans, Maui onions, grape tomatoes, pumpkin seeds, olive oil, balsamic vinegar, nutritional yeast, red pepper flakes, black pepper, salt, and Italian seasoning.

Quite tasty and came together quickly!

in my quest to add plant omega 3 (not algal dha) to the diet, mixed today a flax/chia pudding that should become routine for me:

grind 1tbsp each seed. i use electric spice grinder to pulverize. you could use a metate.

added 2tbsp peanut flour*, 1 heaping tsp baking cocoa**, pinch of salt, 1/2 cup water

tried adding water gradually to avoid hard lumps, but they formed anyway, so got a wire whisk and whisked hard.

* this ingredient is ad-hoc because it improves flavor with the chocolate, plus it adds plant protein. problem is, peanut is rich in omega 6 polyunsaturated fats, which negate improved omega 3 ratio. so, peanut flour, which is defatted to 18% of peanut, fits the bill here. peanut flour might be obtained cheap as a byproduct of peanut oil extraction or as schmancy good packaged as "peanut butter powder" (pricier, minimal sugars added). either way a decent value and a way to get lean plant protein, and it's a new tool in my pantry.

** there are some horror stories about cocoa, child slavery, pollution, etc, but those are coming out of areas in africa that lack basic human rights. if you can get south american cacao eg from peru the crops are good and help small farmers break free of narco-lords. also cacao has lots of magnesium plus other benefits so yeah.

These days, we seem to eat a bowl of lentil salad each day. Even my super picky teenager is keen on it.
Green lentils and chopped onion, mixed with herbs, salt & pepper, pumpkin seed oil and a dash of vinegar.
Super tasty and healthy!

Breakfast: Coffee at the local coffee shop (support the local business whenever I can)
Lunch: Ground Beef, Shredded Cabbage, and Carrots on top of a bowl of rice with 0 calorie szechuan sauce.

Breakfast: homemade granola (oats, pepitas, quinoa, flax, chia, almonds, honey) in organic yogurt (but not home made this time)
Lunch: red lentil curry with homemade whole wheat crackers to dip; peanuts
Dinner: salad and homemade whole wheat bread with olive oil and vinegar

Lots of tea and a bit of coffee throughout the day
