How does sprouting work? Do I just stick certain food in a container with water and wait until little green things come out of it? (:
Does it only work with beans or lentils, or nuts and seeds? What about grains?

You can sprout any kind of seed (nuts, beans, grains, ... are all seeds). You only need to simulate a moist(*) "underground" environment (they need to be kept moist) and they'll start germinating if they're still viable.
(*) Not wet! Drowning them in water won't work.

I was just talking about sprouts the other day. I was told: "You have to do it right to be safe"
If I google it I do find websites claiming as much:

Sounds like more research is in order: Safest way to grow and consume them.

For sprouting, I make a piece of cloth completely wet, put the seeds in the centre and tie it. I then keep it in a filter container so that excess water can drain out. The legumes generally split overnight and are fully sprouted in two days.
For growing grains on small scale in balcony, place moist tissue paper spread over grains and spray water on it if required later. Mine grew around 10 cm in a weak. Once the seed germinates, add soil over it or transfer to soil. I'm in Abhimanyu's Chakravyuha (know how to get in a tight spot, don't know how to get out of it) regarding what to do next as my 4, 5, and 7 grade compulsory science assignment always ended up mysteriously destroyed when I got back after lunch break; so I don't know what to do with growing grains after more that a week. Maybe the people in the Garden Log and homesteaders will help you regarding harvesting

here's how I did it.
To get started:
Put 2 tablespoons of seeds into the jar.
Cover them with a few inches of cool water.
Cover the top of the jar with cheese cloth and secure with a rubber band.
Allow the seeds to soak overnight, then drain off the water.

I did alfalfa and mung beans.
I think I rinsed them daily and stored the jar upside down over a bowl to drain
To get started:
