I cook them at 90 C (that’s around 190-195f) for about 75-90 mins after cutting them in pieces of around an inch, then sautee them in a hot skillet or broil in the oven with some oil and rosemary so that they brown a little Interesting. I just discovered that Steven Rinella (of Meateater) wrote a two volume series directly in line with the theme of this thread. I have not read them, but his guides are usually known for being high quality. Both volumes have perhaps the highest ratings I've ever seen on Amazon for a book. 4.9 stars ...

Ok, looks like these machines are pretty simple. The oven has a central electronic controller that requires a sensor input.
