Re: I'll teach you a way to make good bread at home

My first sourdough starter experiment failed. After smelling strongly of cheap Kraft parmesan for 1-2 days, I continued like Fbeyer suggested, and it started bubbling much (big bubbles on top; it didn’t look like the ready-starter I see all over the web). I continued on with the feeding but at some...

Re: I'll teach you a way to make good bread at home

I acknowledge your professional knowledge over my own, but I've come across plenty of people on the net who've given up on their sourdough because it stinks to begin with, or it separates, both of which seem to be inconsequential for the quality of the final sourdough. In other words: I see pros ad...

Re: I'll teach you a way to make good bread at home

Great write up, we love homemade bread and pizza here. A few points to add, a damp cotton towel is sufficient to keep your dough wet whilst proving, no need for fancy plastic lids or cling film, but if you prefer not to get your fancy tea towels wet and floury, a clean and hole-free shopping bag wi...

Re: I'll teach you a way to make good bread at home

Second step, Starting the sourdough There is many ways of starting a sourdough, as there is many ways to make bread . If it is the first time you are making bread, just follow one way of doing it, don’t mix it up. You’ll have more chance to succeed. We’ll be making a “hard” sourdough (“levain dur” ...

Re: I'll teach you a way to make good bread at home

That 'thing' is called a scraper. I own very large scrapers out of plastic, but I have to say I'm sorry I didn't get some in stainless steel. When I'm sliding the bread off of the peel and unto the (insanely) hot pizza stone I really like NOT to burn the edges of the scraper. Admittedly that issue ...

I'll teach you a way to make good bread at home

I think a lot of you are interested in getting good at sourdough bread making, I live in France and work in an artisan bakery, so I though I would try to teach some of you. I am not an expert yet, but I know enough to get you going in making bread. First step, is getting the right materials. You'll ...

Re: Mushroomy Journal of Hégé

About a year later I haven't updated my journal since I've started it. Probably because the year wasn't that interesting. I left my the house I lived in for free and got into a shared house with friends. It was fun some times, but it was also quite unproductive. I realized how much the people aroun...

Re: Grounded: Indigenous Knowing in a Concrete Reality

I definitely find this interesting. Have you read the book? Is it worthwhile as a way to learn some of the techniques? I'm interested in an effective way to memorize anatomy structures. She mentions something like this briefly in the blog link but more detail is definitely needed for me to understa...

Grounded: Indigenous Knowing in a Concrete Reality

I got really interested these couple of days in the "Art of memory". I first got introduced to it by seeing an article on how easy it was to remember a deck of cards in a couple of minutes with the "Method of Loci". I tried and got hooked. It was really interesting to that that t...

To add to what vexed87 said, A good option if you have a land is to plant a "forest garden". You plant trees, shrubs and perennial herbacious and they make up a low maintenance food forest. In Europe, Martin Crawford has a 23 years old forest garden and he is the expert in the subject. He ...

Mushroomy Journal of Hégé

I'm a starting a journal. I am 20 years old and I am from Belgium. I would like to reach early retirement at around 30-40 years old. But my main goal is to become educated, happy, and to live according to my values. Current situation: I work in a Permaculture farm. I am being paid 12€/h in black. I...

Interesting, but not that beneficial, is it? My phone plan is 9 € so I would only save 2 € and I would have to buy a new card every month.

Samurai Gourmet on Netflix. Based on a comic by taniguchi. It's about a newly retired man who has to learn what to do with his time. He decides to visit different restaurants in his town. It's quite soothing and poetic.

Re: Ecosystem Restoration Camps: Living for free while "saving" the planet?

Living for free while "saving the planet" was a bit of an exaggeration. But I think It's a nice opportunity for people who want to see Permaculture design in action. Somebody at the meeting asked what's in it for us. He said seeing the land slowly transform from a desert to nature where wa...

Ecosystem Restoration Camps: Living for free while "saving" the planet?

I want to present you the "Ecosystem Restoration Camps", a project created by the filmmaker John D Liu. If you are interested in Permaculture, you might have heard of his movie "Green Gold". I have been to his meeting in the Netherlands two weeks ago for the official launch of th...

Re: Anyone Foraging for Food?

I try to incorporate more food from wild plants in my diet. I find that the hardest part is learning to cook them so that you actually want to eat them. It's really easy when the plant is delicious without a lot of preparation. I can't get enough of Allium ursinum for the moment (it makes a wonderfu...
