Just search "cheap housing/apartments for rent in ______" on Facebook (fill in blank with city or region of interest) and list some criteria like dates, budget etc in your "looking for" posts and you will get plenty of solicitations. I would look at places in person before commit...

While the ingredients are fresh, they use that really cheap oil that we try to avoid. That's why we always carry a pot/stove/cookware. It's $30-50 for each country, but a refundable onward ticket through a service is the easiest way to get around your logistics/red tape issues. You could also choose to book a refundable ticket yourself for free but then you're potentially tying up the cost and taking the risk of getting the refund.

I do seem to be spending a lot of mental bandwidth on logistics, and navigating daily decisions (where to eat, what to do, how to get there, how to find more sunscreen, where we should book the next room/ferry/bus, etc...).
