(assuming the forest fires come from climate change). It seems like fires can be attributed to some proportion fire suppression and some proportion climate change. Look into quinoa bowls. I sometimes make a Mediterranean bowl or a Mexican bowl.
If you don't like quinoa it seems like you could get the same benefits from something else. I know what you mean though, there are foods I don't like but I try to eat them because they seem necessary for health reasons.
