Re: Ultimate nutritious, easy to make, easy to package, inexpensive everyday meal?

My suggestions: —quiche—eggs are cheap, crust, some half and half, whatever veggies, meat and cheese you want to throw in. Bake, cut. Easy, portable, works for lunch or breakfast. —sheet pan meals. My personal favorite is chicken thighs, sweet potatoes, onions, roasted together on a sheet pan, with ...

Re: What are you eating today? Cooking inspiration!

I made this recipe this weekend. It got rave reviews. The only thing I changed was I almost doubled the sauce (I like saucy enchiladas—I used leftover sauce in migas last night—see below). https://www.budgetbytes.com/snap-challenge-creamy-chicken-black-bean-enchiladas/ I like that Budget Bytes websi...

Re: Too Old To Retire "Young"

It actually does sound like you want to stay in the job you've worked more than 3 decades to get and become highly proficient in, at least for now. You've looked over the fence, and $ wise, a lot of the options you've thought about don't pay all that well. I've been reading a different book by thes...

Re: Too Old To Retire "Young"

Of course the pay would be less than you have now but that's why it is so important to get expenses down. You are paid in ample free time after all as well! Do you read Jin+Guice's Journal? The recent discussion was centred around this topic. Maybe there are some insights to be had for you as well....

Job change instead of complete retirement?

I've been spending some time looking around and thinking about my next step. I want to step out of my current role soon (see journal) but am not quite ready to completely quit working. Mostly because 1) health insurance 2) I'd like to earn a little money--not a ton--to bridge the gap for a few years...

Re: What are you eating today? Cooking inspiration!

I thought I'd mention that I'm having a ton of fun with Imperfect Foods. Not posting this to get anything, but it's fun--each week you get a box of groceries that you can customize, and the food is VERY fresh, but not perfect like at the grocery store. In my box this week I got some of the biggest c...

Re: Best books on Kindle unlimited?

I recommend Hugh Howey’s “wool” series if you like sci fi. I think Robert Dugoni is on Unlimited, if you like mysteries/ thrillers. I’ve liked all of Rick DeStefanis’s stuff. He’s got some Vietnam stuff, and I think he’s got a new thriller series out. Depends what you like to read. I think just pick...

Re: College (again), Avoiding Burnout

I’d say choose a major that can go into some different directions, if you’re not quite sure what to do. Most people i know didn’t end up working at what they got their degree in. Me: English major, work in insurance DBF: history major, became a lawyer (a fairly common trajectory) Pal: art major, wor...

My Near Death Experience

Sunday morning, about 2 am, I was awakened by a wicked pain in my stomach, kind of under my right rib cage, but really all over. To be blunt, it felt like the WORST gas pain I’d even er had in my life, and I’m not kidding when I say I felt like something could explode in there. After pacing and writ...

Re: Matt's Journal - Currently on FIRE (After working 10 years)

Thanks for posting your story. Your financial plan/result is impressive. I also think it’s cool you moved to a small town to achieve it. Lately I’m convinced that’s a good way to achieve FI early. I’m sorry about the Lyme disease—that’s really hard. I do have a question: given your health concerns, ...

Re: What are you eating today? Cooking inspiration!

Doing some batch cooking today. Currently roasting butternut squash for soup (squash, veg broth, garlic, onions—easy and yummy—roasting the squash first makes all the difference). Cooking salmon and shrimp to take for my mom’s dinner tonight at the nursing home—just putting it on salad, but she’s be...

By the way, great courses are available on audible, and they are often quite cheap. I’ve even gotten freebies.

Re: Skill Share, Curiosity Stream, Great Courses Plus, Brilliant, Language Pod

Huge fan of Great Courses. Used to buy CD sets used on eBay; now of course streaming is available. Great on long car rides. I think they are especially great on topics like history, religion, philosophy, etc.

Re: What are you eating today? Cooking inspiration!

I’m doing the budget thing this week: Breakfast: overnight steel cut oats with milk, a touch of vanilla, and pumpkin spice Lunch: leftover thanksgiving turkey (from the freezer), made into turkey salad on a whole wheat “sandwich skinny”, 2 Roma tomatoes, lettuce, an orange and 2 small apples. Dinner...

Re: What do you reuse/repurpose/upcycle?

“Spice must flow!” Do you guys remember a magazine that was around for 10 years or so, called “Readymade?” They uses to have really cool ideas for using old stuff, etc. They had challenges like “what can you make with 2 old pallets?” That were always really interesting. I like “Make” magazine, but t...
