supercook is a great resource. Aside from that, the real trick is just exposing yourself to different methods and techniques and then cooking whether you feel like it or not.

I also have some ancient Old Hickory knives. They're the best. I was recently cooking in another kitchen and the thin, cheap, stainless steel knife just about drove me up the wall.

I like the beer from the local concern a lot. From what I seem to recall, wine is taxed the least, liquor the most, and beer is somewhere in between. At least here in the States.

Loss leaders + a well stocked pantry is the way to go. Learning to plan a menu doing it this way was my biggest hurdle. I'm finally getting to the point where I know what to do with greens.
