List your top 5 egg meals excluding....

...scrambled eggs, omelets, fried eggs, and quiche. Those are done in!

Now that we are back into 'egg season' (I'm getting 7-8 per day now from my hens) we are looking for ways to change up how we eat them. The list above just doesn't cut it like it used too.

Soft-Boiled eggs. (Put in big pot of water that's at a full hard boil, take them out after 5 minutes and get them out of the shells quickly. Figure out how to remove them from the shells without burning your fingers). I normally put them on toast. You can play with the exact timing in order to get the exact yolk consistency you like

Hard-boiled eggs. I don't like eating them much but they can be saved for a good snack I suppose. I read that Albert Einstein considered his second most useful discovery to be that while making soup he could add in eggs to hard boil them for eating later.

French toast! With cinnamon and maple syrup. Oh baby!

+1 for French toast. You can freeze it, too. Same with bread pudding.

I like Scandinavian-style open face sandwiches with hard-boiled eggs. I also like to drop an egg in ramen noodle soup or make sandwiches with eggs like a monte cristo or croque madame.

I like poached eggs, and there are lots of good French recipes using them if you're willing to learn some basic French sauces like bearnaise or bechamel.

Deviled eggs or egg salad or egg in salad
Custard or frozen custard
Egg bread or many other baked goods
Sauces made with eggs such as Hollandaise or rich rarebit
Egg noodles or dumplings
Frittata or potato pancakes or rich pancakes/crepes
Pickled eggs
Egg fried rice variations
Meringues or meringue topped pies

one of my favorite simple and delicious recipes: Southwest Breakfast Casserole. I eat it for dinner quite often.

6. Chinese fried rice (toss in two or three scrambled eggs depending on the quantity of rice)
7. Asian egg drop soup, also known as egg flower soup
8. Chinese shrimp and egg scramble, topped with oyster sauce and scallions and served over rice
9. Italian stracciatella

11. Pasta carbonara
12. Ice cream/gelato

Some great suggestions here, they will be utilized!

Hard boiled eggs are are eaten quite often, I had been taking 4-6 per day for lunch for a while.

In all honesty I think we'll always have an excess of fresh organic eggs, and I don't think I can truly call it a problem.

I like to make "breakfast bowls", layering in various ingredients depending on what's on hand, and topping w/fried, scrambled, or poached egg. Pick your favorites and put them in a bowl:

Beans
Rice
Chopped blanched kale
Sauteed Greens
Avocado
Potato
Chopped chicken-apple sausage
Other leftover meats
Salsa
Sauerkraut
Cheese
Hot sauce

Lots of combinations to make, some better than others (avocado with siracha; salsa or sauerkraut w/greens but not w/potato, etc.- you find your own preferred combos). No need to limit to breakfast but I seem to do better if I eat early and lighten up the rest of the day.

Quiche and frittata were menu when friends visited and I had chickens.

I think my grandmother used to make angel food cake (whites) and custard (yolks) when she had a surplus and the family was literally fed up with savory variants.

Yay for hen fruit!

No one mentioned souffles?

Old family favorite for breakfast is rice and eggs. Warm the rice in a skillet, pour a few beaten eggs over the top and mix/turn for a few minutes until everything "sets". When younger I liked it with jam. Now I tend to have it with either ketchup or salsa.

Had a friend who chopped baked potatoes, peppers, and onions. Warm these in a skillet, pour beaten eggs over them, when mostly set, flip the whole mess to another hot skillet and cook the other side. Again, served with salsa or ketchup.

Don't forget to use it to make mayonnaise. We use a stick blender and make a jar in seconds.

Mayo's a very clever suggestion!

Can only think of a few that haven't been mentioned:

Dutch baby/German pancake--good made sweet with lemon and powdered sugar or savory with green onion
Egg nog, not just for Christmas anymore
Scotch eggs
Popovers--great with cheddar and olives
Floating islands--weird egg whites dessert, but the French love it

Do you consume essentially unlimited eggs? Has it had any effect on your health? After all the nutritional brainwashing on cholesterol etc. that's gone on in this country it's hard for me to believe it's really ok to eat them every day, although I'd like to.
