I personally found the information about kimchee and bread making transformative.

brute thinks michael pollan is a populist hack. his ideas of eating healthy are just not viable alternatives for 90% of people alive today, and more importantly, they don't give actual advice. he uses homely-sounding platitudes and appeals to emotion to make upper-middle class humans feel good about going to the farmer's market on saturday.
