I think that contracts tend to offer ,,more opportunities", but in reality they usually tend to give more power to employer (in terms of not paying social burden which would be expected in ,,normal" way of employing).

Notion: I am from ,,socialist" Europe and I do not like risk.

I'm not aware of any good primers that would cover everything. The usual issues are duration, compensation and non-compete clauses. Also whether termination must be "for cause" or not.

It's very easy to draft an unenforceable contract in this area due to the prohibition against slavery (you can't get a court order to force someone to stay in a job) and the restrictions on non-competes that violate public policy. But every state's laws are a little different.
